The humble Sprat is often overlooked, shoppers drawn to bigger, better-known fish. That’s a shame, because fresh Sprats are one of the gems of the UK’s seafood kitchen.

Easy to prepare, quick to cook and available in an abundance – there’s few fish better suited for a delicious, and nutritious snack.

To be honest, you don’t really need a recipe for Sprats – grill them, fry them, bake them – you’ll be winner no matter how you cook them (just don’t overcook them…).

However, in our handy guide to Sprats we’ve include our favourite recipe – which is easy to follow and will result in a delicious snack that is almost too divine for words – almost.
